White beans and sweet potato salad with tahini chipotle dressing

This is a beautifully fresh and protein packed salad, topped with a sweet and spicy peanut butter dressing.
Ingredients
1 butternut squash (340g)
2 sweet potatoes
1 cup kale
1/2 cup frise lettuce
1 cup canned white kidney beans
small handful beets micro greens
1/2 tbsp sesame seeds
juice of 1 lemon
2 tbsp tahini
½ tsp chipotle pepper
1 tsp sambal oelek
2 tbsp maple syrup
1 clove garlic
1 tbsp peanut butter
75ml olive oil
salt
