This Whole Wheat Blueberry Buckle is a healthier coffee cake perfect for your next brunch!
Ingredients
1/4 cup coconut oil, solid
1/4 cup unsweetened applesauce
1/4 cup coconut sugar
1 chia egg (1 tbsp chia seeds mixed with 3 tbsp water)
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
1 teaspoon baking powder
1 tablespoon cinnamon
1/4 teaspoon salt
1/2 cup milk of choice (I used unsweetened soy)
1 pint fresh blueberries or 2 cups frozen blueberries
