Winter Vegetable Pizza

Pizza with sweet onion puree, roasted winter veggies, goat cheese, and pesto – awesome for breakfast the next day with a poached egg!
Ingredients
For the Sweet Onion Puree:
6 cloves garlic, chopped
4 small sweet onions, sliced
olive oil, to coat pan
2 TBS balsamic
1 TBS red wine vinegar
½ lemon, juice
¼ C brown sugar
For the Pizza:
1 fennel bulb
6 small carrots
1 turnip
2 parsnips
1 lb whole wheat pizza dough
4 oz. goat cheese
For the Pesto:
½ C basil
1 TBS pine nuts
3 TBS olive oil
2 TBS parmesan cheese
