Za’atar Spiced Kale Salad with Hummus + Apple

I love adding hummus to my salad because it adds this extra layer of creaminess as well as making me more full. The apple adds crispness and crunch, and the seeds some healthy fat as well as texture and flavour.
Ingredients
4 – 5 stalks kale (approx. 2 packed cups), washed and ripped
juice of 1 lemon
1 tbsp olive oil
1/4 tsp salt
1/4 cup hummus (I used this one)
1 apple, cut into small pieces
1 tbsp sunflower seeds
1 tbsp pumpkin seeds
1 tbsp dried cranberries
2 tsp za’atar
1 tsp chia seeds
