1 28oz can peeled whole tomatoes, chopped
3 tbsp extra virgin olive oil
1 sweet Vidalia onion, peeled and cut in half
¼ tsp salt
2 medium zucchini
½ tbsp extra virgin olive oil
3.5 oz shiitake mushrooms, stems removed and sliced
1 tsp extra virgin olive oil
Salt, pepper
freshly shredded or grated Parmesan cheese and fresh thyme for garnish
