A fall spiced, green-speckled, sweet drippy glazed snack! These zucchini spice muffins are gluten-free, oil-free, and vegan.
Ingredients
2 medium zucchini
1 cup oat flour
1/2 cup oat bran
8-10 pitted medjool dates
2 tbsps molasses
2/3 cup non-dairy milk
1/2 tsp cinnamon
1/4 tsp cloves
1 tbsp baking powder
GLAZE:
2 tbsps non-dairy milk OR 3 tbsps non-dairy yogurt
1 tsp molasses
1/2 cup powdered sugar
