This 10-Minute Chickpea Guacamole Salad has all the traditional elements of a great guacamole & makes a healthy, protein packed lunch.
Ingredients
1 – 15 oz. can chickpeas, rinsed and drained
1 avocado, diced
2 Tbsp. chopped shallots
½ tsp. kosher salt
½ tsp. ground cumin
1 lime, juiced
1 jalapeno, seeded and diced
2 Tbsp. crumbled cotija cheese (or feta)
2 Tbsp. chopped cilantro
