Spinach wilted in a peanut butter-Sriracha sauce with crushed peanuts, cilantro and a hint of lime: super healthy, ready in 10 minutes and so delicious you won’t believe it.
Ingredients
1 Tbs olive oil
3 (or more) Tbs Sriracha
2 Tbs peanut butter
10 c spinach leaves (not salad fresh is fine)
2 Tbs lime juice (half a lime’s worth)
1/4 c unsalted roasted peanuts, crushed
cilantro and lime wedges to serve (optional)
