Super easy and healthy sugar cookie with only 3 main ingredients. They are still soft and chewy like a cookie should be.
Ingredients
8.8 ounce bag unsweetened coconut flakes (3 cups), or 1 cup coconut butter
1/4 cup coconut sugar
1 egg (pasture preferred)
Pinch salt
Optional add ins:
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 cup chocolate chips
1/4 cup goji berries
