Ingredients

farro, uncooked
extra virgin olive oil
cremini mushrooms, stemmed and sliced
garlic, minced
crushed red pepper flakes
freshly grated ginger
bok choy, chopped
organic frozen vegetable medley, thawed
green onions, chopped (both white and green parts)
reduced sodium soy sauce
large eggs, lightly beaten
salt and pepper, to taste
