Spicy Corn and Wild Rice Overstuffed Peppers

Vegetarian stuffed peppers overflowing with fresh corn, wild rice and red onion.
Ingredients
4 oz uncooked long grain rice
2 oz wild rice
2 cups water
2 cloves garlic, minced
5 TBSP unsalted butter, softened
4 large bell peppers
4 cups fresh corn
1 red onion, diced (about 2 cups)
1/4 tsp cayenne pepper
salt & pepper
