Chocolate Graham Crackers (GF)
Snappy gluten-free chocolate graham crackers – perfect for one last batch of s’mores while it’s still warm!
¾ cup (90g) chestnut flour (available at Italian markets, pasta shops, or online – My favorite brand is Calleris)
3 tablespoons (30g) brown rice flour (white rice flour would work too)
3 tablespoons (22g) corn starch
2 tablespoons (15g) dutch-processed cocoa powder (I use Rodelle Organic Baking Cocoa)
¼ cup (50 grams) dark brown sugar, lightly packed
½ teaspoon baking soda
¼ teaspoon kosher salt
4 tablespoons (57 grams) cold unsalted butter, cut into 1-inch cubes
3 tablespoons mild-flavored honey, such as clover
2 tablespoons whole milk
1 teaspoons pure vanilla extract
2 tablespoons coarse sugar, such as organic cane sugar, for sprinkling
