Spinach Tart
A savory tart with spinach and cheese on a flaky puff pastry crust.
2 tablespoons olive oil
1 cup chopped onions
2 teaspoons chopped garlic (about 2 cloves)
1 (10-ounce) box frozen chopped spinach, defrosted
2 tablespoons chopped scallions
½ cup grated Gruyère cheese
¼ cup freshly grated Parmesan cheese
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
Pinch ground nutmeg
2 tablespoons toasted pine nuts, optional
2 large eggs, lightly beaten
½ tablespoon dry bread crumbs, plain or seasoned
1 sheet frozen puff pastry (such as Pepperidge Farm), defrosted overnight in the refrigerator
1 egg beaten with 1 tablespoon water, for egg wash, optional
