Vegan stir-fry veggies in peanut sauce. Fresh vegetables are stir-fried and then drizzled with a sauce made from coconut milk and vegan peanut sauce.
Ingredients
1 Tablespoon canola, peanut, or grapeseed oil
2 cups broccoli florets
1 red bell pepper, julienned
1 large zucchini, cut into half moons
2 carrots, cut into rounds or half moons
1 bunch of swiss chard, stems removed from leaves. Stems chopped, leaves left whole
1/2 cup fresh cilantro, chopped
1/2 cup scallions, chopped
1 cup coconut milk
1 cup vegan peanut sauce
