Vegan dessert that will knock your grandma’s socks off, not to mention the husband! Also gluten-free, paleo and can be made ahead.
Ingredients
Filling:
14 oz can full fat coconut milk (do not use light)
1/4 cup maple syrup
1 tsp pure vanilla extract
Crust:
1/4 cup coconut oil
1/4 cup maple syrup
1/4 cup cacao powder
1/2 tsp pure vanilla extract
1 3/4 cup almond meal/flour (finely ground almonds)
Toppings:
2 cups strawberries, hulled & quartered
1 cup raspberries
1 large banana, sliced
1/2 cup almonds, coarsely chopped
3 tbsp chocolate chips like Enjoy Life
1 tbsp coconut oil
