This white bean soup with barley is creamy comfort in a bowl. The parsnips caramelized in white wine and miso are a sure hit.
Ingredients
1 can chickpeas
1 can white kidney beans
1 can great northern beans
1 small white onion
1.5 cups barley
3 cups vegetable stock
2 celery stalks
4 parsnips
5 garlic cloves
1 tablespoon white miso
1/4 cup raw cashews
1/2 cup white wine, divided
olive oil, earth balance or butter for sautéing
small twig of fresh rosemary and thyme
white pepper and salt to taste
