Two Bean Soup
Two Bean Soup, a delicious combination of beans, Swiss chard and veggies. Perfect comfort food.
3/4 cup (142 grams) borlotti beans (dried, soak for 8-10 hours, rinse before cooking)
3/4 cup (161 grams) cannellini beans (dried, soak for 8-10 hours, rinse before cooking)
2 tablespoons (26 grams) olive oil
1 onion chopped
2 large carrots chopped
1 celery stalk chopped
3 cloves garlic diced
1 sprig rosemary
1 teaspoon (3/4 gram) oregano
1 teaspoon (3/4 gram) basil
1 bay leaf
1/2 teaspoon (2 grams) salt
hot pepper flakes to taste
1 bouillon cube
1 can diced tomatoes (nothing added)
5 cups water
2-3 cups swiss chard chopped
