Kale, Caramelized Onion and Apple Stuffing

This stuffing has all the flavors with braised kale, apples, rich caramelized onions and toasty pecans
Ingredients
1 lb 100% whole grain, bakery bread (I used the whole wheat Tuscan pane at Trader Joe’s)
1/4 cup extra-virgin olive oil plus 2 tablespoons
1 large yellow onion, thinly sliced
4 garlic cloves, minced
1 teaspoon fennel seeds
1/4 teaspoon crushed red pepper
2/3 cup chopped pecans, toasted
2 medium apples
10 ounces chopped kale (or 1 bunch, stemmed and chopped)
2 1/2 cups low sodium vegetable broth
1 egg
