Sweet Tater Crunch Bars
Moist and delicious sweet potato bars with just a touch of crunch! Vegan friendly and no refined sugar. Sweetened naturally with dates!
CRUST INGREDIENTS:
1 cup gluten-free oats
2 cups raw pecans
½ cup large pitted dates
3 tbsp. ground flax
1 tsp cinnamon
½ tsp sea salt
2 tbsp. melted coconut oil
FILLING INGREDIENTS:
4 peeled, boiled sweet potatoes
2 tbsp. melted butter
2 flax seeds eggs (1 egg = 1 tbsp. ground flax seed with 3 tbsp. water)
¼ cup lite coconut milk (canned)
2 tsp vanilla
1 tbsp. cinnamon
1 tsp pumpkin pie spice
CRUNCH TOPPING INGREDIENTS:
1 cup gluten-free oats
¼ cup almond flour
½ c almonds
1 tsp cinnamon
¼ tsp pumpkin pie spice
2 large pitted dates
3 tbsp. melted butter
