Vegan El Nido salad with cashews and mango slices.
Ingredients
1 cup lettuce, young spinach or other green salad
1/2 mango, cut to stripes
1 tomato, cut to wedges
1/4 cucumber, sliced
1/2 small turnip, peeled and sliced
1 tablespoon cashews
1 tablespoon sunflower or hemp seed oil (this will give you more nutty taste)
1 tablespoon wine vinegar
a pinch of salt
