Vegan French Onion Soup
This vegan version of French onion soup tastes even better than the original thanks to slow-cooking the onions and seasoning with white wine, soy sauce, and balsamic vinegar. This is the kind of recipe that proves that vegan food can be just as good as the “real” thing.
¼ cup coconut oil
4 large onions, thinly sliced
¾ cup dry white wine
4 cups water
½ cup reduced-sodium soy sauce or tamari
2 tbsp balsamic vinegar
2 sprigs fresh thyme
2 cloves garlic, minced
¾ – 1 tsp sea salt or to taste
⅔ cup water
½ cup raw cashews
1 tablespoon white wine vinegar
1 tablespoon nutritional yeast
1 tablespoon arrowroot powder
½ teaspoon sea salt
thickly-sliced seeded or gluten-free baguette, toasted
thyme sprigs
