Lentil Butternut Squash Soup
This nutritional soup is a well-balanced meal that is made from butternut squash, lentils, and kale. Both kids and adults will appreciate this hearty winter soup. It is a great choice for fueling those little active minds and bodies.
1 small onion, finely chopped (approximately 5 oz)
5 medium size Bella mushrooms (approximately 3 oz, sliced)
12 oz butternut squash (peeled, seeded, and diced)
2½ cups cooked brown lentils
2 cups coconut milk (Silk Brand preferred)
2-3 cups shredded kale (approximately 6.5 oz)
1 tbs canola oil
2 tsp cumin powder (freshly grounded preferred)
2 tsp thyme
1 tsp basil
¼ tsp oregano
¼ tsp cayenne pepper
½ tsp salt
(Optional) 1 tbs finely chopped green onion for garnishing
