Citrus Kale Salad with Feta, Pumpkin Seeds, Avocado and Clementines. The perfect way to bounce back after all of the merry-making of the holidays!
Ingredients
4 cups chopped kale leaves (no ribs)
2 clementines, segmented or supremed
½ avocado, peeled, pitted and sliced
½ cup cherry tomatoes, cut in half
½ cup crumbled feta cheese, 2 ounces
2 tablespoons roasted unsalted pumpkin seeds (pepitas)
zest and juice of 1 lemon (or less to taste)
zest and juice of 1 clementine
2 tablespoons extra-virgin olive oil
1 tablespoon grated shallot
½ teaspoon salt
¼ teaspoon pepper
