Thai Stuffed Sweet Potato Skins
Thai-flavored sweet potato skins topped with peanut sauce that are perfect for game day or any day.
For the Sweet Potatoes:
3 medium sweet potatoes, scrubbed
2 tablespoons Jojo’s Sriracha chili sauce
1/4 tsp. salt
1 tablespoon extra-virgin olive oil
1 red pepper, seeded and chopped
3 garlic cloves, minced
1 tablespoon minced fresh ginger
4 scallions, white and light green parts thinly sliced
1/4 cup fresh cilantro, roughly chopped
For the Peanut Sauce:
1/4 cup peanut butter
1 tablespoon Jojo’s Sriracha chili sauce
1 tablespoon tamari (or soy sauce if you can tolerate gluten)
1 tablespoon agave syrup
Juice from 1 lime
For the Garnish:
Fresh cilantro, roughly chopped
Roasted peanuts
