Vegetarian Chicky Parm with Marinara Sauce
Cauliflower transforms into delicious comfort food the whole family will love.
Ingredients for the Cauliflower Cakes:
1 head of cauliflower
1 can of chickpeas
1/2 cup of nutritional yeast
3/4 cup grated mozzarella cheese
2 eggs
2 garlic cloves
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon dried oregano
Some fresh herbs, I used basil and thyme
1/2 cup panko bread crumbs (for crust)
1/2 cup grated parmesan cheese (for crust)
Ingredients for the Marinara Sauce:
1 28oz can whole tomatoes
1 onion
1 handful of fresh basil, plus more for garnish
2 garlic cloves
2 6oz cans of tomato paste
1 tablespoon red wine vinegar
1 teaspoon salt
1 teaspoon sugar
1 teaspoon pepper
1/2 teaspoon pepper flakes, if you like spice
1 dab of butter and a bit of olive oil for sautéing
