Ingredients
1 Tbsp coconut oil
1 large yellow onion, diced
3 cloves garlic, minced
1 tsp red pepper flakes
1 Tbsp curry powder
6 cups of vegetable broth
1 1/2 cups dried green lentils
1/2 cup light coconut milk
salt, to taste*
~20 small cubes of pan fried paneer (4 servings)
naan bread for dipping (optional)
