These Vegan Burrito Bowl Enchiladas are the perfect addition to your Cinco de Mayo party!
Ingredients
2 tablespoons olive oil
1/2 green pepper, thinly sliced
1/2 yellow onion, thinly sliced
1 zucchini, thinly sliced
1 handful of baby spinach
1 cup black beans
1 1/2 cup brown rice, cooked
1 1/2 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/4 cup salsa
7-8 tortilla (I used whole wheat)
1 batch (or can) of enchilada sauce
optional: avocado slices, fresh cilantro
