Cinnamon-spiked amaretti dough rolled in a cinnamon sugar coating, aka Snickerdoodle Amaretti Cookies. These are soft and chewy, even though they don’t contain any gluten, dairy, butter or oil.
Ingredients
For the Amaretti Cookies:
2 egg whites
½ cup raw sugar (or superfine/caster sugar)
2 cups almond meal
Pinch of salt
½ teaspoon ground cinnamon
½ teaspoon blackstrap molasses
½ teaspoon vanilla bean paste
1 tablespoon maple syrup
For the Cinnamon-Sugar Coating:
3 tablespoons raw sugar (or white sugar)
¼ teaspoon ground cinnamon
18 blanched almonds
