Gluten-free, vegan muffins that perfectly pair fall spices with summery peaches.
Ingredients
DRY INGREDIENTS:
1¼ cup gluten free flour (I prefer Bob’s Red Mill All Purpose Baking Flour)
½ tbsp baking powder
½ tsp cinnamon
¼ tsp ginger
1/8 tsp cardamom
1/8 tsp salt
Optional: 2 tbsp chopped walnuts, pecans or crystallized ginger
WET INGREDIENTS:
¼ cup cashew milk (or your dairy-free milk of choice)
¼ cup coconut oil
1/3 cup pureed peach (~1/2 a peach)
1/3 cup maple syrup
½ peach, diced
