I love the crispiness of the tofu, and the nice creamy inside, with just that slight crunch of the peppers is definitely a delight.
Ingredients
1 package of firm tofu cut into cubes
1 medium orange pepper chopped into 3 cm squares
1 medium red pepper chopped into 3 cm squares
3 tablespoons of pesto
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon onion powder
1 tablespoon extra virgin olive oil
