A hearty fall salad bursting with chopped kale, quinoa, crisp apples, and tender roasted acorn squash and tossed in a creamy maple dressing.
Ingredients
1 small acorn squash, cut into ½ inch slices
½ tablespoon olive oil
½ tablespoon maple syrup
½ teaspoon salt
¼ teaspoon pepper
6 cups chopped kale
1 ½ cups cooked quinoa
1 large apple, diced
¼ cup pistachios
1/4 cup apple cider vinegar
2 tablespoons almond butter
2 tablespoons maple syrup
1 teaspoon Dijon mustard
1 clove garlic, roughly chopped
dash of salt and pepper
