These Whole Grain Peanut Butter Fingers are lightened up with whole grain and coconut oil— but are still packed with that classic cookie flavor!
Ingredients
½ cup brown sugar
2 tablespoons melted coconut oil
1 teaspoon vanilla extract
1 cup old fashioned rolled oats, ground into a flour
¾ cup whole wheat pastry flour
¼ teaspoon salt
½ teaspoon baking soda
½-¾ cup dark chocolate chips (I used Ghirardelli 60%)
1 large egg, room temperature
½ cup creamy natural peanut butter
