Garlicky Beans and Lemony Greens

A quick and easy lunch or dinner that’s also budget-friendly, healthy, and delicious!
Ingredients
BEANS:
1 T. olive oil
1 c. red onion, chopped
4 garlic cloves, minced
3-15 ounce cans black beans, drained of the top inch of liquid
1 small tomato, chopped
¼ t. cayenne
sea salt, to taste (I use about ½ teaspoon)
3 T. cilantro, minced
GREENS:
1 T. olive oil
3 small shallots (or about ¼ cup red onion), chopped
¼ t. red pepper flakes
~6 c. dark greens (spinach, kale, or chard are all good options)
sea salt, to taste
lemon juice, to taste
