Ingredients
coconut or olive oil
yellow onion, chopped
garlic cloves, minced
fresh ginger, grated or minced
red lentils, rinsed well
cumin
coriander
turmeric
cardamom
cinnamon
cayenne, or to taste
sea salt, added at the end of cooking
water
dark leafy greens, such as spinach or chard
