These loaded veggie nachos will rock your Mexican Night dinner! Packed with flavour and veggies, they’re better than restaurant nachos by far!
Ingredients
For the sauce:
1/2 cup of plain Greek yogurt
1/4 cup of cilantro leaves
juice of half a lime
pinch of sea salt
half a jalapeño, seeds removed
2 tablespoons of water (to thin out sauce if needed)
For the chips:
424g of sweet potato tortilla chips
1/4 of a red onion, thinly sliced
1/2 of a 12 oz can of corn
300g of goat cheese, crumbled
Toppings:
2 avocados, diced
pico de gallo
