Chunky Vegetarian Chili
Chunky Vegetarian Chili | hearty, healthy, and oh so satisfying.
2 tablespoons extra virgin olive oil (30 ml)
1 medium red onion, diced
3 medium carrots, chopped
2 ribs celery, chopped
4 teaspoon salt
4 garlic cloves, pressed or minced
2 tablespoons chili powder
2 teaspoons ground cumin
1 teaspoons smoked paprika
1 1/2 teaspoon dried oregano
2 small cans diced tomatoes (15 ounces or 400 grams)
1 cans black beans, rinsed and drained (15 ounces or 400 grams)
1 can pinto beans, rinsed and drained (15 ounces or 400 grams)
2 cups water or veggie stock
1 tablespoon liquid smoke (optional)
1 bay leaf
2 tablespoons fresh cilantro, chopped + more for garnishing
1 to 2 teaspoons lime juice or apple cider vinegar, to taste
