Gluten-free Savory Amaranth Waffles with pear fennel salad and a sunny side up egg.
Gluten-Free Savory Amaranth Waffles:
⅓ cup (38g) amaranth flour
⅓ cup (35g) oat flour
⅓ cup (40g) sweet rice flour
¼ cup (29g) tapioca starch/flour
2 teaspoons baking powder
½ teaspoon salt
¼ teaspoon pepper
½ cup + 3 tablespoons whole milk
2 eggs, separated
3 tablespoons melted butter
1 tablespoon sugar
2 tablespoons French feta, crumbled (optional)
2 tablespoons whole grain amaranth (optional)
Popped Amaranth & Fried Eggs:
2 tablespoons whole grain amaranth
4 large eggs
Pear Fennel Salad:
1 bartlett pear, cored and thinly sliced
4 cups arugula
½ small head fennel, shaved or thinly sliced
½ tablespoon olive oil
Juice of 1 lemon
Salt and pepper, to taste
