Low-Sugar Pumpkin Bars
These Low-Sugar Pumpkin Bars use mostly Stevia and include coconut oil and almond flour for a pumpkin treat that’s still high in flavor.
4 eggs
1 1/4 cup Stevia-in-the-Raw granulated sweetener (or other sweetener of your choice)
1/2 cup brown sugar (or use all sweetener if you want pumpkin bars that are even lower in sugar)
1/2 cup coconut oil, melted (or use your preferred oil)
1 can pureed pumpkin (not pumpkin pie mix)
1 cup White Whole Wheat Flour
1 cup Almond Flour
1 1/2 tsp. baking powder
3/4 tsp. baking soda
2 tsp. cinnamon
1 tsp. pumpkin pie spice
1 tsp. kosher salt
1/2 cup pumpkin seeds (or use other nuts of your choice, or even frosting if you prefer)
