Herbed Flatbread

Fresh and soft homemade flatbread with fresh herbs, great for sandwich wraps or dipping.
Ingredients
1 package (2 1/4 teaspoons) active dry yeast
2 cups all purpose flour
1/2 teaspoon coconut sugar (brown or white sugar works too)
1/2 teaspoon salt
1/3 cup chopped herbs (basil, parsley, oregano, thyme)
1 teaspoon olive oil + extra for coating bowl and pan
3/4 cup warm water
