An easy spring risotto you can make in the oven. No stirring required!
Ingredients
1 1/2 cups Arborio Rice
4 cups vegetable broth
1/2 cup dry white wine
1 1/4 cup freshly grated parmesan cheese
1 shallot, minced
2 cloves of garlic, minced
1 can artichoke hearts
5 oz baby spinach
1 tablespoon fresh thyme, minced
1 lemon, zest and juice
extra virgin olive oil
sea salt and fresh ground black pepper
