California Caesar Salad
Creamy with zing – this hearty vegan Caesar salad will keep you fueled all afternoon, and has flavors for days!
Caesar dressing:
1/2 cup hemp seeds
1/2 cup filtered water
3 tablespoons fresh lemon juice
1/2 teaspoon balsamic vinegar
1/2 teaspoon tamari
1 teaspoon apple cider vinegar
1 teaspoon Dijon mustard
1 tablespoon flax oil (or EVOO)
1/4 to 1/2 teaspoon sea salt
1/8 teaspoon black pepper
2 cloves garlic
1/2 teaspoon nutritional yeast
1 teaspoon capers
3 kalamata olives
2 teaspoons tahini
2 tablespoon minced fresh parsley
1/4 teaspoon raw honey (or maple syrup)
Lemon pepper tofu:
1 block (14 oz.) extra firm tofu
1 tablespoon quality EVOO
juice from 1 lemon (about 2 tablespoons)
sea salt
1/2 teaspoon black pepper
Brazil nut parmesan:
1/2 cup raw brazil nuts
zest from 1 large, organic lemon
1/4 teaspoon salt
1 clove of garlic
Salad:
4 stalks dino kale
2 heads of romaine (or 4 hearts)
2 medium avocados, ripe
