Gluten-free, Vegan, soft and chewy cookies that are nicely spiced with cinnamon and nutmeg.
Ingredients
1 cup almond meal/flour
1 tbsp coconut flour
1 tsp baking soda
3/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/3 cup maple syrup
1/2 cup almond butter
1 cup shredded zucchini
1 tsp vanilla extract
1/4 tsp almond extract
1/3 cup slivered almonds, plus more for topping
