Ingredients
2.5 lbs ripe tomatoes, cored and cut into 1 inch chunks
4 Persian cucumbers (or 1/2 English cucumber) peeled and cut into 1 inch pieces
1 Anaheim pepper, seeded and cut into 1 inch pieces
1/2 red onion cut into 1 inch cubes
2 garlic cloves roughly chopped in 3
1 tsp salt (you can add 1/4 tsp extra, according to preference)
2 tsp Sheri vinegar
1/4 cup high quality extra virgin olive oil
pepper to taste
