Apple Cinnamon Baked Oatmeal
Apples, cinnamon and brown sugar! Flavors that filled my favorite childhood breakfast, stove-top oatmeal. Today these same flavors are part of my new favorite make ahead breakfast, Apple Cinnamon Baked Oatmeal.
OATMEAL:
2 cups oats
1 teaspoon baking powder
2 1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon sea salt
2 granny smith medium apples
1 3/4 cups non-dairy or milk of your choice
3 eggs
1/2 cup brown sugar
1 teaspoon vanilla
TOPPING:
3 tablespoons brown sugar
2 tablespoons flour
2 tablespoon vegan butter, or regular butter
BROWN SUGAR SAUCE:
1 cup non dairy milk or milk of your choice
1/2 cup brown sugar
1/2 teaspoon salt
1/2 teaspoon vanilla
2 tablespoons corn starch
