Apple Spinach Honey Muffins

Serves: 24 mini muffins + 4 large muffins or 12 large muffins
Wholesome green spring muffins topped with coconut whipped cream & pomegranate
Ingredients
1 cup whole spelt flour
1 cup light spelt flour
1 cup ground almonds
2 eggs
1 cup fresh spinach leaves
2 apples, coarsely grated
1/4 tsp sea salt
1/2 cup honey
1 can of coconut milk (400ml) chilled for at least 10h
1 tsp baking powder
1 tsp baking soda
juice from 1 lime
1/2 cup olive or coconut oil + some more for oiling the tray
pomegranate (optional)
1 tablespoon of liquid sweetener for the coconut cream (agave syrup, maple syrup, stevia…)
