Absolutely delicious and flaky tarts that are topped with a creamy mix of ricotta, cheese and lemon along with tender asparagus.
Ingredients
1 Sheet Puff Pastry – completely thawed
3 Tbsp Skim Ricotta Cheese – you may use full fat too
2 Tbsp Parmesan Cheese – shredded
8 oz. Asparagus – halved
1 Large Egg – whisked
1 Tbsp Olive Oil
Salt and Pepper – as per taste
1 Tbsp Parmesan Cheese – for decoration
