If you like asparagus and garlic, then this is the soup for you! It has plenty of both. A relatively light and refreshing soup that is best served a little colder than room temperature. Season with your favorite herbs.
Ingredients
Olive oil
Onion, chopped
Garlic, cloves peeled and chopped
Fresh asparagus, coarsely chopped
Water
Orange juice
salt to taste
generous amount of cracked white pepper
half and half or milk substitute (makes it richer tasting but can be omitted)
Fresh herbs (lemon thyme or tarragon work best), chopped
