Vegan asparagus tart with strawberry salsa is a must in asparagus season. It requires just a few ingredients and it’s super easy to make.
Ingredients
1 sheet puff pastry
250 g/9 oz thin asparagus, tough ends removed
1 can of white beans
⅓ cup of nutritional yeast
¼ cup of cashews, preferably soaked
1 clove of garlic
½ lemon, juice + zest
1 tbsp tahini
salt, pepper
For the Strawberry Salsa:
2 cups of strawberries
½ red onion
2 tbsp fresh, chopped chives
½ lemon, juice
1 tsp maple syrup
1,5 tbsp balsamic glaze
salt, pepper
