Bagel Thin Pesto Sandwich

So easy to make with no cooking required. They are also so versatile! Eat them for breakfast, lunch or as a snack.
Ingredients
Pesto:
⅓ cup pine nuts
1 tablespoon nutritional yeast
1 cup packed basil leaves
1 cup packed arugula
1 tablespoon fresh lemon juice
1 teaspoon unsweetened almond milk
2 teaspoons olive oil
¼ teaspoon salt
Toppings:
4 tablespoons favorite hummus
2 bagel thins (4 sides)
freshly ground black pepper and salt
Optional Toppings:
tomato slices
roasted red peppers, from jar (drained)
arugula
