Garlicy hummus spread across whole grain toast topped with roasted asparagus, melted cheese, walnuts and a drizzle of balsamic vinegar.
Ingredients
1 batch of roasted asparagus spears
2 slices whole grain bread
1/4 teaspoon grape seed or olive oil
1/4 cup roasted garlic hummus (or you favorite hummus)
0.5 ounces chopped walnuts (about six large walnut halves)
1/4 cup shredded mozzarella cheese
1/2 teaspoon balsamic vinegar
salt and pepper
2 lemon wedges
